Garlic Baker

The secret to great garlic is to bake the whole bulb, drizzled with a bit of extra virgin olive oil, freshly ground salt and pepper, and a few herbs. Baking brings out the sweet, nutty flavor of the garlic. When the cloves become soft and cool enough to handle, squeeze the bulb and spread contents on Italian bread or crackers or into potatoes before mashing.
